Extra virgin olive oil in “blend”

The mono-varietal oils can be used alone, wishing to appreciate their specific peculiarities, or in mixtures, or in “blend“. As often happens, the recipe is not unique and the fact that an extra virgin was produced from a single variety does not mean that it is better than a blend produced from different varieties.

For the three mono-varietal extra virgin olive oils produced by our olive groves, we combine two blended oils made with different blends of the cultivars present in our land, namely:

  • a blend in which all three cultivars are mixed (Nocellara del Belice, Biancolilla and Cerasuola) in percentages that give the right balance;
  • a blend in which the Nocellara del Belice and Biancolilla cultivars are mixed in the same percentage.
