It comes with a slightly spicy light fruity, and sometimes with hints of tomato, artichoke, almond and fresh grass. Its aroma is fruity and delicate and its flavor is sweet. Olio extra vergine d’oliva monovarieltale estratto da olive “Biancolilla” raccolte soltanto da uliveti di nostra proprietà che coltiviamo per un intero anno per far si che producano olive della migliore qualità ed idonee a dare un olio extra vergine a bassissima acidità. I terreni, con certificazione “DOP Val di Mazara” ed in zona IGP, sono ubicati a Menfi nelle contrade “Abate” e “Feudotto” con certificazione “DOP Val di Mazara” ed in zona IGP.

The “Biancolilla” oil is extracted an olive that owes its name to the fact that it goes from the light complexion of the acerbic state (pea green) to the more lively (wine red) of maturity. It is widespread in the central-western area of the island, particularly in the provinces of Palermo and Agrigento and, to a lesser extent, in the province of Trapani.

The“Biancolilla”oil is characterized by a very low acidity and a very refined taste; it is balanced, quite fluid, light green immediately after milling and straw yellow after decanting. It comes with a slightly spicy light fruity, and sometimes with hints of tomato, artichoke, almond and fresh grass. Its aroma is fruity and delicate and its flavor is sweet. In the kitchen, this oil gives the best of it:

  • for fish dishes, salads and vegetables;
  • baking cakes.

Conservazione: Le caratteristiche organolettiche vengono mantenute, il più a lungo possibile, inalterate conservando il prodotto ad una temperatura compresa tra i 15 e i 20 gradi, lontano da fonti di calore, luce e ossigeno che ne accelerano l’ossidazione. E’ consigliabile non travasare in oliere che ne accelerano il processo di ossidazione. The dark glass or stainless steel containers are recommended to make it better to maintain.
