The classification

The classification

The following oils are available on the retail market:

  • virgin olive oil;
  • olive oil
  • olive pomace oil.The virgin olive oils are obtained, only by mechanical processes or other physical processes, in conditions that do not cause alterations of the oil, from the fruit of the olive tree (drupa) which must not undergo any treatment other than defoliation, washing, kneading cold, from centrifugation, from decantation without the use of solvents or adjuvants with chemical or biochemical action and without re-purification and mixing processes with oils of other nature.The virgin olive oils thus obtained are classified as follows:
  • extra virgin olive oil, the virgin olive oil whose free acidity, expressed as oleic acid, is at most 0.8 g per 100 g with other characteristics detectable in Annex 1 of the Delegated Regulation (EU) 2015/1830 of the Commission of 8 July 2015 (category 1);
  • virgin olive oil, virgin olive oil whose free acidity, expressed in oleic acid, is at most 2 g per 100 g with other characteristics detectable in Annex 1 of the Delegated Regulation (EU) 2015/1830 of the Commission of the 8 July 2015 (category 2).In addition to virgin olive oil, there are also on the market:
  • olive oil (non-virgin) obtained by cutting refined olive oil with virgin olive oil, with free acidity, expressed as oleic acid, not exceeding 1 g per 100 g with other characteristics detectable in the Annex 1 of the Delegated Regulation (EU) 2015/1830 of the Commission of 8 July 2015 (category 5);
  • olive pomace oil obtained from the cutting of refined pomace oil with virgin olive oil, with free acidity, expressed as oleic acid, not exceeding 1 g per 100 g with other characteristics detectable in Annex 1 of the Regulation Delegate (EU) 2015/1830 of the Commission of 8 July 2015 (category 8).

In addition to virgin olive oil, there are also on the market:

  • olive oil (non-virgin) obtained by cutting refined olive oil with virgin olive oil, with free acidity, expressed as oleic acid, not exceeding 1 g per 100 g with other characteristics detectable in the Annex 1 of the Delegated Regulation (EU) 2015/1830 of the Commission of 8 July 2015 (category 5);
  • olive pomace oil obtained from the cutting of refined pomace oil with virgin olive oil, with free acidity, expressed as oleic acid, not exceeding 1 g per 100 g with other characteristics detectable in Annex 1 of the Regulation Delegate (EU) 2015/1830 of the Commission of 8 July 2015 (category 8).
